In addition to their wines, the Counts Capponi produce a Grappa distilled from their own Chianti grapes, a very flavourful Extra Virgin Olive Oil, and an aromatic Red Wine Vinegar.
All these products are made according to ancien tradition; vinegar, for one, being recorded in the family since 1693


Grappa

Villa Calcinaia’s Grappa, following an ancient Chianti recipe, is made from the dregs of grapes of the Sangiovese, typical varietals of the hills of the Chianti Classico. After a lengthy fermentation the rich and fragrant dregs are distilled following the traditional method of the alternate still. The Grappa is left to ripen for five months in stainless-steel containers until it reaches 42° C. The Grappa is crystal-clear in colour and shade. Its taste is warm, suave and harmonious. The aftertaste, fragrant and long lasting has the same balance as found in the bouquet enhanced by traces of fruit preserves. The right temperature for Villa Calcinaia’s Grappa is 9/13° C. It is best served in small crystal tulip shaped glasses.
